Salmon Bagel with Dill Salad

My husband and I have been on a journey trying to find delicious low card food. One of the hardest categories of food I have found to make low carb is breakfast food. I started looking for low carb bagels and came across this recipe by Low Carb Maven. I use her recipe religiously when I want to make the basis for a delicious breakfast. One of our favorite ways to eat these bagels are with smoked Salmon and Dill Salad. She has a lot more tips in her recipe for how to cook the bagels, I have primarily included what works for me below.

Ingredients

  • 1.5 Cups Shredded Mozzarella (133g)
  • 2 Oz Cream Cheese (57g)
  • 1 1/4 Cup Almond Flour (119.5g)
  • 1 Egg
  • 1 Tbsp Oat Fiber
  • 1 Tbsp Baking Powder
  • 1 Package of Smoked Salmon
  • 3/4 Oz Fresh Dill (21g), chopped
  • 1 Shallot (25g), minced
  • 1 Lemon, cut into quarters
  • 1 Tbsp Extra Virgin Olive Oil
  • Salt to Taste

Instructions

  1. Pre heat oven to 400F.
  2. Add Mozzarella and cream cheese to a microwaveable bowl and heat in the microwave for 30 seconds. Remove from microwave and stir with a spatula. Repeat this step till cheese melts and combines with cream. It should have a smooth and creamy texture.
  3. Crack open an egg into the mixing bowl and fold it into the cheese.
  4. Now add all the dry ingredients, almond flour, oat fiber, and baking powder and mix into a dough.
  5. Take the dough out of the mixing bowl and transfer to a cutting board.
  6. Gently form it into a long roll and evenly section it into 6 parts.
  7. Form each section into a long roll and connect the ends to form the bagel.
  8. Spray the bottom of a baking dish with PAM cooking oil and place all the bagels in the pan. 
  9. Lightly spray the top of the bagels with PAM cooking oil and place bagels in the oven for 17 to 20 minutes.
  10. While the bagels are cooking let us prepare the dill salad. Add chopped dill and minced shallots to a mixing bowl.
  11. Squeeze one of the lemon quarters over the dill and shallots, add salt to taste, and mix well.
  12. Add extra virgin olive oil to the Dill salad and mix well.
  13. To prepare smoke salmon open the package and separate the salmon slices on to a plate for serving.
  14. When bagels are done, remove them from the oven and let cool.
  15. Cut them through the middle, along the long side.
  16. Garnish with smoked salmon and dill salad.
  17. Take a bite and enjoy!
