Roasted Beets with Goat Cheese and Walnuts

This recipe is from Chef John from his Food Wishes YouTube Channel. He is someone I find to be a reliable source for good tasting food. All his recipes that I have tried over the years, which are many, were all hits. Since this recipe, as seen on the food wishes blog, is not about precision I do not provide all the precise measurements I normally do. I modified some of the original cooking instructions to my preferred way of cooking. I also used chive and cucumber goat cheese instead of plain goat cheese and it turned out really good.

Ingredients

  • 4 Tbsp Walnut or Canola Oil
  • 1 Beet (or several small ones, about 8 oz)
  • 2 Oz Chive and Cucumber Goat Cheese
  • Salt and Pepper to taste
  • 1/2 Cup Roasted Chopped Walnuts
  • 2 Tbsp Champagne or Sherry Vinegar
  • Beet Greens, thinly sliced for garnish
  • Fresh Chives, chopped to small pieces for garnish

Instructions

  1. Preheat oven to 375F
  2. Prepare the beets by cutting the beet greens off the beet and trim the other end of the beet as well. Save beet greens if they look good in the refrigerator for garnish later (this time my beet greens were not good so I chose not to use it for garnish).
  3. Place beet(s) on top of a crinkled aluminum foil and place both the beet(s) and foil in a baking dish.
  4. Bake beets in the oven for 45 minutes.
  5. While the beets are roasting, toast the walnuts in a pan on low heat stirring the walnuts frequently. Be careful not to burn the walnuts. When the walnuts are toasted turn off heat and set aside. 
  6. After 45 minutes remove beet(s) from the oven and set aside to cool.
  7. When beets have cooled down peel the skin and cut into bite sized pieces.
  8. Preheat oven again, this time to 400F.
  9. While oven is preheating, to a mixing bowl add beets, 2 tablespoons of oil, vinegar, a generous pinch of salt and freshly cracked pepper and mix well.
  10. On a serving dish add 2 tbsp of oil and coat the entire baking surface. Make sure the serving dish is oven safe and sized for the amount of beets being made.
  11. Add beets to oven safe serving dish and place small chunks of goat cheese evenly in all the empty spaces.
  12. Finally, roast the beets and goat cheese for 15 minutes.
  13. Garnish with walnuts, beet greens, and chives.
